ONE POT WONDER๐Ÿ˜๐Ÿ˜๐Ÿ˜

You know those days when you're hungry, rather starving! and you almost absolutely positively know you'll be sprawled passed out on the floor if you manage to get through the prepping the ingredients stage? Wellllllllll I go through that quite regularly๐Ÿ™ˆ but as I loooooove to eat and loooooooove food I found out that popping every single ingredient in the pot at the same time works absolute magic๐Ÿ˜๐Ÿ˜๐Ÿ’ƒ๐Ÿ’ƒ๐Ÿ’ƒand more often than none the food is done in about 20 minutes max 25minutes ( doesn't work for beans o! Ehen)

Jollof rice is one thing I still don't cook very well at least compared to the iya alase's ( Women who cook at your home for a few as in local firewood and huge cauldrons and stuff) they get it right all the time and in such huge quantities too!

Anywho so I get home starving like Marvin and alas rice( which I try not to eat too often) is the fastest thing to cook so I wash the rice severally(1 cup) pour some already blended pepper about 4 cooking spoons In with the rice in a pot, add salt to taste, chop 1 onion, 3 cloves if garlic add half that to the pot, about a teaspoon of dried yellow pepper, about a handful of ground dried crawfish, a couple pieces of smoked catfish(love love love), add water to cover and cook for about 20 minutes or until water dries. I tasted for softness, stirred and then added turmeric powder, dried sweet basil and the rest if the chopped onion and garlic with a little more water reduced the heat and steamed for just under 5minutes and voila my one pot wonder was ready. I was patient enough to plate and take a picture๐Ÿ˜.

Ps mostly I don't cook with oil and I have found out the food tastes just as great if not better and a lot healthier too. That said when I do cook with oil I hardly ever add more that a couple tablespoons and that would be for a huge pot.
I use mostly cold pressed olive, sesame and coconut oils.

GREEK YOGHURT๐Ÿ˜๐Ÿ˜๐Ÿ˜๐Ÿ’ƒ

Olla peeps,

For someone who never liked milk talk less yoghurt, it's amazing my turn around! I absolutely love yoghurt and if it's home made all the better. I discovered a lady in my estate who makes the best yoghurt I have ever tasted( in all of my yoghurt drinking years tee hee hee). Even for a sweet tooth like me(I know I know I'm working on it๐Ÿ™ˆ) I can eat the Greek yoghurt without honey(even though I still put in a tablespoon full).

To make it exciting for breakfast, lunch or dinner I add a few nuts and raisins in the mix. This has pecan nuts, slivered almonds and raisins. Yum yum yum yum.

QUINOA AND BANANA SMOOTHIE๐Ÿ˜๐Ÿ˜

This was one if those days when I thought I had nothing at home to cook. It still amazes me how sometimes all one needs is not more than 4 ingredients to make a meal.

Out came the forgotten drumsticks in the freezer, the garlic, ginger, onions, salt, dry yellow pepper, black pepper and my Quinoa๐Ÿ˜. 

Drumsticks in pot with the crushed and chopped garlic and ginger, chopped onions, salt and peppers and a smidgen of water to cook. Once cooked I added about a cup of water to the pot, that came to a boil and I then added my already washed Quinoa and let it all simmer for 15minutes, garnished with spring onions and voila! Lunch๐Ÿ’ƒ๐Ÿ’ƒ๐Ÿ’ƒ๐Ÿ’ƒ

Just before I made the one pot Quinoa I had to have something in my rumbling tummy so I whipped out the blender and in went the almond milk, bananas, avocado, vanilla flavoring, cinnamon, nutmeg, honey, almonds and groundnuts๐Ÿ˜๐Ÿ˜. Needless to say they were both absolutely yummy!

Breakfast

Most mornings I wake up hungry and dilly dally about what to have for breakfast and this could take several hours "mega eye rolling". Today was one of those mornings. Finally decided on eggs (as I try to stay away from bread as much as possible๐Ÿ˜ doesn't always work sha), so I put the pan on the gas, a drizzle of olive and sesame oil and some unsalted butter and then BAM!!! I though pancakes๐Ÿ’ƒ๐Ÿ’ƒ๐Ÿ’ƒ. So out came the flour, almond milk, 1 egg, nutmeg, salt, springs onions, yellow pepper and garlic and all natural honey from Olaa. Yum yum yum. Even though breakfast became brunch my tummy was satisfied and my soul most definitely lifted! Welcome to the beautiful month of June people and My God crowned it with abundant showers of blessings๐Ÿ˜๐Ÿ˜๐Ÿ˜

EDIKAINKONG SOUP

Olla peeps, 

Trust y'all are fantastic today๐Ÿ˜๐Ÿ˜๐Ÿ˜. I am and always grateful to eat and talk about food๐Ÿ’ƒ๐Ÿ’ƒ๐Ÿ’ƒ

So I looooooove edikainkong and can truthfully have only kinda gotten it right the very first time I made it as I was told by a calabar friend. And after that the rest was guess work( I hardly ever use recipes for food as in measuring and stuff but with baking it absolutes are vital).
 
I stumbled upon Dooneys kitchen on Facebook and alas an edikainkong recipe and I thought you already have the Ugwu leaves(washed in vinegar water solution, best leaves I have bought in a long time and from a supermarket too! Amazing! In Lagos!), the smoked catfish(only way I can eat the stuff), panla/stockfish, ede, yellow pepper and chicken( don't do beef, Pomo and all that other stuff). I only had to buy water leaf and the market for that is practically 10minutes away from me. It was also too much of a hassle for me to go get goat meat๐Ÿ˜.( my goat meat guy comes from a bit aways. . . )

The only thing I didn't use was palm oil as I haven't touched the stuff in over 5years. I either typically use olive oil which I always have at home or coconut oil of which I have 3 sources who make it in lagos.

Here's how it turned out( this was what was left over the following day as my nephew, hubby and I had eaten it with Amala and I was too hungry to style the plate and take a picture. It got rave reviews from both guys and I tasted the difference. It was absolutely yummy.๐Ÿ˜๐Ÿ˜๐Ÿ˜

JUICING

Three things I can't do without, God, Food and Sleep and they are not negotiable at allllllllllllllllllllllll. I say all the time that God blessed me with the love of food and sleep if not I'd probably be weirder than I actually am. 
So having to get up at 5am is a huge deal for me cause I love my sleep๐Ÿ˜๐Ÿ˜
Any who on with my story, I bought some apples, oranges, carrots, pepper(rodo aka scotch bonnet and tatashe aka bell pepper), tomatoes, ugwu, spring onions ( did I mention I looooooove onions too) and potatoes today. Decided to juice as I haven't done in a while and voila! My orangeapplelimecarrotgingerrodo juice๐Ÿ˜๐Ÿ˜๐Ÿ˜. Saving to buy a Vitamix but my trusty Phillips whole fruit juicer does wonders. Enjoy

My love for green๐Ÿ˜

Ok so I take my love for green too far sometimes(never too Far or too much for me though๐Ÿ˜๐Ÿ˜๐Ÿ˜).  I will change my background colour so you don't have to strain to see. I'd like you to still have 20/20 bison when you're done reading๐Ÿ˜. I can't seem to find how to change it on my phone but would find a way.
